Mini-Cherry Cheesecake Bites
Ingredients
4
large eggs
1
- ½ cup sugar
32
oz cream cheese
4
tsp vanilla
Vanilla
wafers
Can
of cherry pie filling
Procedure
1. Preheat
oven to 375 degrees F. Line cupcake tins with 16-18 paper liner
2. In
medium bowl, beat eggs with sugar. Add pieces of cream cheese. Beat
until smooth, about 10 minutes. Add vanilla.
3. Place
vanilla wafer in each paper cupcake liner. Fill ½ full with
cream cheese mixture
4. Bake
for 10-12 minutes, or until cheesecake mixture is set.
5. Cool
completely. Remove cupcake liners and gently top with cherry pie
filling
Yield:
32 to 35 pcs
