![]() This is very quick, easy Chicken Pineapple Entree to be served over rice. It is listed as both meat and vegetarian because it works around with pineapple and veggies.
Preparation:
Marinate chicken with salt, pepper and Chinese salt. Heat oil in a pan, fry capsicums, remove and keep aside. In the same oil, fry chicken.
1/2 cup pineapple juice 1/2 cup pineapple pieces (Tidbits) 1/2 cup cornflour 1 cup chicken stock 1 tsp Chinese salt 2 tsp sugar 2 capsicums, sliced 3 tablespoon vegetable oil 250gms chicken, cubed Salt and pepper to taste For sauce
Mix cornflour with one cup of water, add pineapple juice and sugar and boil. While boiling, mix chicken stock and continue to boil till it becomes thick. In a bowl transfer the chicken and capsicum slices, add the sauce and garnish with pineapple pieces.
