Ingredients
:

1/3 cups uncooked white rice
1
2/3 cups water
4 chicken breast halves
1/4 cup green onions sliced
2 tsp. ginger root minced
2 cloves garlic minced 5
3 cups assorted Asian vegetables such as bok choy, pea pods, red peppers
1 cup chicken broth
1 tsp. sesame oil non stick cooking spray
Procedure :
1. In a saucepan bring
water to a boil. Add rice and stir. Reduce heat, cover and simmer for
20 minutes.
2.
Spray a 10-inch skillet with nonstick spray and heat over medium heat
until hot.
3. Add the chicken breasts and cook for 2-3 minutes until golden brown on both sides.
4. Add the ginger root and garlic, cook for 30 seconds.
5. Add the chicken broth, rice and sesame oil.
6. Cover and bring to a boil, reduce heat and cook for 5 minutes.
7. Add assorted vegetables and continue to cook until liquid is absorbed.
8. Just before serving, stir in green onions
