 Today, ukoy is more sophistaced and served in the restaurants. The new
recipe borrows from the japanese tempura and the batter is now lighter
and the ukoy cooked crispier.
The sawsawan (Dipping sauce) is a mixture of
vinegar,salt and chopped or crushed garlic and black pepper

Ingredients
:

g (7 oz) small prawns

ml ( 2/3 cup) water

tablespoon annatto seeds (optional)

g (1 cup) bean sprouts

g (½ cup) chopped spring onions

small carrot,cut into thin strips (50 g)

sweet potato,cut into thin strips (about 50 g/ 1/3 cup)

ml (1 cup)oil

Vinegar
Garlic Dip
Batter

g (1 cup) flour

teaspoon baking powder

teaspoon salt

1
egg, well beaten
Cooking
Procedure :

1. Peel
prawns,remove heads and tails and devein. Reserve the prawn shells
and heads. Slice prawns into two. Put the reserved shells and heads
into a bowl and add water. Press the prawn heads and shells lightly
to extract juice then strain liquid into a bowl. Soak annatto seeds
in the prawn stock, pressing on the to extract color. Strain the
prawn stock and set aside.

2. Clean
bean sprouts well,removing the tails. Drain on paper towels. Mix
prawns, bean sprouts,spring onions,carrot strips and sweet potato
strips in a bowl.

3. To
make a batter,combine flour,baking powder and salt in a bowl. Blend
in the beaten egg and the reserved prawn stock and stir until
smooth.

4. Scoop
out ¼ cup of the prawn mixture onto a plate. Pour in about ¼
cup of the batter. Heat the oil in a wok and fry the prawn mixture
in hot oil until crispy and lightly browned. Repeat with remaining
prawn mixture and batter. Drain on paper towels and serve with
Vinegar Garlic Dip.
Annatto
seed are used as a food coloring. These red seeds are soaked in
warm water or oil. Then pressed to extract its coloring, which gives
food on orange to reddish tint. The seeds have little flavor and are
discarded once the coloring is extracted. Annatto seeds are sold in
packets in supermarkets or provision shops.
